Lesson Objectives
A. Content Objective: Understand the various structures of lipids, why they are used for long-term storage and the effects of saturated and unsaturated lipids on health.
B. Language Objective: Create a infographic showing the scientific evidence of for health risks of saturated and unsaturated lipids on health from one research article and an analysis of the methods used.
C. Syllabus Details:
i. Fatty acids can be saturated, monounsaturated and polyunsaturated
ii. Lipids are more suitable for long term energy storage in humans than carbohydrates
iii. Triglycerides are formed by condensation from three fatty acids and one glycerol
iv. Scientific evidence for health risks of trans fat and saturated fatty acids
v. Evaluation of evidence and the methods used to obtain the evidence for health claims made
vi. Use of molecular visualization software to compare cellulose, starch and glycogen
vii. Structure and function of cellulose and starch in plants and glycogen in humans.
viii. Unsaturated fatty acids can be cis or trans isomers
ix. Structure and function of cellulose and starch in plants and glycogen in humans
x. Determination of body mass index by calculation or use of a nomogram
